I must confess, I have so many Lemon Bar recipes. I'm not sure why I keep trying more out.
Actually I love the first recipe I ever made..... Well I guess I will just start a collection. :)
Classic Lemon Bars
Crust
1/2 cup butter softened
1/4 c sugar
1 cup flour
Filling
2 eggs
3/4 cup sugar
3 Tablespoons lemon juice
2 Tablespoons flour
1/4 teaspoon baking powder
Confectioners' sugar
For the crust, cream butter and sugar; gradually add the flour. Press into a greased 8 inch square baking dish. Bake at 375 for 12 minutes. Cool slightly.
For the filling, beat the eggs, sugar, lemon juice, flour and baking powder until frothy ( to check for that, stop mixing and let it settle to see if it it foaming ). Pour over warm crust and bake for 15-20 minutes or until lightly browned. Dust with confectioners' sugar. Cool before cutting into bars.
** I actually prefer my Lemon Bars to be refrigerated in an air tight container.
